Blueberry Protein Almond Pancakes

  • 1 scoop Bennie Blends Protein Powder
  • 1 cup flour
  • 1 cup blueberries
  • 1/2 tsp each baking powder & baking soda
  • 2 tbsp each ground almonds & sugar
  • 3/4 cup Greek yogurt
  • 1 tsp lemon zest
  • 6 tbsp. almond milk
  • 1 egg
  • 1/2 tsp almond extract
  • 1/4 cup slivered almonds

Raspberry Protein Muffins

Raspberry Protein Muffins

  • 3 scoops Bennie Blends Protein Powder
  • 1.5 cups oats
  • 3 eggs
  • 1/3 cup almond milk
  • 2 tbsp. Greek yoghurt (heaped)
  • 1/4 cup stevia
  • 2 tbsp. manuka honey
  • 1 tsp. baking powder
METHOD Preheat oven to 170. Mix all ingredients together and add berries. Bake for 12 – 17 minutes

Berry Passionate Smoothie

Vegan Smoothie

  • 1 scoop Bennie Blends Berry Powder
  • 1 cup Ice
  • 1/3 cup blueberries
  • 1 passionfruit (pulp only)
  • 1/2 cup apple juice or coconut water
METHOD: Combine all ingredients into blender or food processor. Garnish with toasted coconut flakes and fresh lime zest.

Berry Coconut Protein Bark

Protein Blueberry Snacks

Gluten-free | Vegan | Raw
  • 1/4 cup raw cacao butter (buttons or shaved)
  • 1/4 cup extra virgin coconut oil
  • 1 scoop Bennie Blends Protein Powder
  • 2 x 20ml tablespoons rice malt syrup (or pure maple syrup)
  • 2 x 20ml tablespoons tahini (or almond butter)
  • Handful of freeze-dried blueberries
  • Handful of dried cranberries
  • Handful of raw pistachio nuts
  • Line a 10 x 16cm container with baking paper or cling film.
  • Melt the cacao butter and coconut oil together in a small saucepan over the lowest heat on your stove, stirring to combine. Take the pan off the heat and stir through the protein powder, rice malt syrup and tahini using the back of a spoon to smooth out any lumps.
  • Pour the mixture into the prepared container. Sprinkle over the berries and pistachio nuts. Place the container in the fridge for a few hours to set. Once set, remove the bark from the container and break into pieces. Store in the fridge or freezer.
Makes about 10 pieces.

Blueberry Coconut Dreamsicles

Healthy popsicles

Gather This:

  • 1 c. blueberries
  • 2 tbsp. coconut nectar or sweetener of your choice (optional)
  • Juice of 1 lemon
  • 1 scoop Bennie Blends Berry Powder

Do This:

In a medium bowl, combine the blueberries, coconut nectar (if desired), and lemon juice. Mix lightly to coat the berries.

Place the Berry Powder in a second medium bowl. Adding the blueberry mixture a few spoonfuls at a time, whip with a handheld electric mixer or whisk until thickened. Some of the berries will break down, releasing their juices and creating texture. If you want the berries whole, gently hand mix them into the cream using a rubber spatula. If you prefer a quicker method and a more vibrant purple pop, simply blend all the ingredients together in a blender.

Pour the mixture into pop molds. Freeze for 2–6 hours or until completely firm. Run the mold under warm water for a few seconds and gently remove the pops. Serve immediately or store in the freezer.

Yield: 5 dreamsicles


Blueberry Muffin

Gluten Free Muffins

Gather This:

  • ¼ cup unsweetened apple sauce
  • 1 scoop Bennie Blends Protein Powder
  • 6 drops vanilla liquid stevia
  • 3 eggs (room temperature)
  • ½ cup Living Foods coconut oil (liquid form)
  • 2 cups almond meal flour
  • ½ cup brown rice flour
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ½ tsp sea salt
  • 1 cup organic blueberries 

Do This:

Preheat the oven to 350 degrees. Add the apple sauce, honey, stevia, eggs, and coconut to a high-speed blender and mix well. Mix the almond flour, rice flour, baking soda, baking powder, and salt in a bowl and then blend with the mixture. Turn off the blender, and gently mix in the blueberries with a spoon. Fill a muffin tin with the batter and then bake for about 25 minutes.


Boo Berry Smoothie

Superfood Smoothie

Gather This: 

  • 1 cup nut milk of choice
  • 1/2 frozen banana
  • 1 tablespoon orange zest, plus juice of 1/4 orange
  • 1 tablespoon fresh grated ginger (or a one inch piece)
  • 1 full packet of acai
  • 1/4 teaspoon cayenne
  • 1/2 cup to 1 cup of ice
  • 1 scoop Bennie Blends Berry Powder Superfood + Protein Powder

Do This:

Blend all ingredients well until smooth + top with bee pollen! ENJOY!


Cool Superfood Apple Cider

Detox Cider

 

 Gather This: 

  • 5 apples, juiced (Granny Smith apples make a deliciously tart juice, while Gala apples make a sweeter juice!)
  • 1 orange, juiced 
  • 5 whole cloves
  • 5 cinnamon sticks
  • 5 whole cardamom pods
  • 2 star anise
  • 1/2 to 1-inch piece of fresh ginger, grated (amount based on how spicy you like it) 
  • ½ teaspoon fresh lemon zest
  • 1 scoop Bennie Blends Protein Powder
  • ice cubes (6 cubes per glass) 

Do This: 

Add the orange juice, cloves, cinnamon sticks, cardamom pods, star anise, ginger, lemon zest, and manuka honey in a saucepan (feel free to play around with the amount of spices to get it to your liking!). Cover and heat on medium-low heat for about 15-20 minutes. Remove from heat for 15 minutes, add the fresh apple juice, and then strain. Pour into your favorite glass, toss in some ice, add a straw, and ENJOY!
